Imberlach
Ingredients:
- 10-12 sheets of matzo
- 200g honey
- Sugar
- Cinnamon
Crush 10-12 sheets of matzo and set aside.
Take a non-stick pot, pour in 200g of honey and 3/4 cup of sugar. Take a board measuring 1m×80cm or 90x90cm, wet the top with cold water. Leave it covered. In a small plate, mix cinnamon with sugar. Take the pot with honey, dissolve the sugar on low fire, stirring constantly. Stir until it turns a very light brown. Gradually mix the crushed matzo into the pot with honey. Stir with a wooden spoon or spatula. When everything turns a light brown color, spread it on the board. Before that, wet the board with water again and have some water on the side in a bowl so that you can wet your hands. Level everything so that the thickness is under 1 cm (5-6 mm). Sprinkle the cinnamon and sugar mix on top. When the dish cools, it can be cut into strips 4 cm wide, separating strips from each other. When they cool, cut each strip into diamond 🔷 shapes, and dip one side in the sugar and cinnamon mix.
