Matzo dumplings (galushki)

- matzo
- 1 egg
- chicken schmaltz (melted chicken or goose fat)
- 1 onion
- spices to taste, allspice, bay leaf
- greens to taste

Grind the matzo to a texture closer to flour. Add the egg, chicken schmaltz with finely chopped fried onion. Add your preferred spices. Mix well and shape into balls. Drop them into boiling water, add allspice, bay leaf, and any other spices you like. Boil for 5 minutes.

Garnish the broth with greens.
