Dabich by Leah Cohen

Our favorite Pesach recipe is an Arabic dish called Dabich!

It's a Tunisian dish eaten on Passover instead of the traditional cholent.

Ingredients:

  • 3 chopped onions
  • a packet of parsley
  • a packet of dill
  • 6-7 stalks of celery, with the leaves
  • a chunk of pumpkin - diced
  • fresh peas (if using)
  • beef (preferably head)
  • paprika
  • nutmeg
  • black pepper
  • cumin
  • a pinch of cinnamon

Directions:

Fry the onion in a large pot. Add the pumpkin and fry until softened. Mix in all the finely chopped leaves and

fry until everything becomes soft. Add spices according to taste. Chuck in the peas and the meat and bring to boil.

Remove from the stove and place on your hotplate to cook for 8-10 hours.
