Matzo Brei

- 3 sheets of matzo
- 3 eggs
- hot water
- salt, pepper
- onion (optional)
- vegetable oil


Take 3 sheets of matzo and place them in a bowl. Pour a little boiling water over them (so that they don't get too soggy). The matzo should be in the water no longer than 2 minutes.

In another bowl, beat together 3 eggs, add salt and pepper to taste, and fried onion, if desired.

Drain the water from the matzo using a strainer and add the matzo to the eggs. Heat a deep frying pan with vegetable oil. Carefully spread the matzo in the pan and fry on medium heat.

Get a cutting board ready. Flip the contents of the pan onto the board. Use two spatulas to turn it over and drop back into the pan. Fry until golden brown.

When done, put the dish on the cutting board and cut into portions. Serve as replacement for bread.
